The Stark-Billings 4-H meats judging team traveled to Manhattan, Kansas recently to compete in the National 4-H Meats Judging Contest. The team finished sixth overall and second in the retail cut judging. The team was recognized as the second-place team in total judging, and Wyatt Dorner finished third overall individual in this category. Team members included Wyatt Dorner, Taylor Downing, Katie Schmidt and Will Schmidt. Justin Kathrein, Quintavia Polensky and Jess Schulz served as alternates to the team.

“As the team made their way to the national event, there were many opportunities to engage in networking and put their skills to practice,” says Kurt Froelich, NDSU Extension agent, Stark-Billings County. “The team practiced at North Dakota State University, South Dakota State University, University of Nebraska and Nebraska Beef in Omaha, Nebraska.”

Meats judging consists of placing six classes which includes two retail cut classes, two classes of beef and two classes of pork. The students also give oral reasons on one beef class, one pork class and one retail cut class. In addition to the judging, the students must identify 30 retail cuts which includes the species, wholesale cut, retail name and suggested cookery method.

“The time and effort leading up to competing in a judging contest provides valuable workforce readiness skills such as communication, attention to detail, decision-making and much more,” says Froelich. “Being on a judging team is a fun experience that allows young people to connect, make friends and enjoy new learning and leadership opportunities.”
