Lentils are a type of legume. They are low in sodium and saturated fat, and high in potassium, fiber, folate and polyphenols. They have blood sugar-lowering effects because they are a slow-digesting starch. They are a source of prebiotics, which feed good bacteria in our gut to help prevent digestive diseases.
