Round Whites

Round WhitesPrimarily used for chipping and/or tablestock.  Characterized by shape, white skin, high dry matter, and low sugar accumulation.

 

 

 

Reds

RedsUsed for tablestock.  Typified by red skin color and generally waxy texture, with low dry matter content and often a sweeter flavor.

 

 

 

Russets

RussetsTypically used for frozen processing and tablestock.  Distinguished by the brown netted skin.  Generally, russets have long tuber shape, medium to high dry matter content, and low sugar accumulation.

 

 

 

Specialty

SpecialtyIncludes the heirloom cultivars from Europe and early settlers in addition to the yellow, red, orange, and blue/purple fleshed cultivars derived from South American cultivars and species.
