Pulse End Quality

The mission of the food crop utilization research team is to assess the chemistry and processing of raw commodities. Activities of the research team include, but are not limited to: 1) Fractionate functional and health components from raw materials using conventional chemical and physical methods; 2) Characterize the relationships among the chemical, structural and quality parameters of raw materials and their functional properties; 3) Assess the stability of health components, obtained by fractionation, to conventional food processes; 4) Determine the impact of the functional and health components on the chemical, physical and sensory properties of food products. Commodities being evaluated in this research include: flaxseed, pulses and edible beans, soybean, and sunflower.

The pulse quality program is focused on studying and disseminating quality factors in pulse crops grown in North Dakota and surrounding regions. Factors such as yield, moisture content, protein and starch composition, nutritional components and marketing factors such as hydration and starch viscosity are all measured and compared to historical data to track the quality of regional pulse crops. A yearly U.S. Pulse Quality Survey is published and pulse research projects supporting the mission of the food crop utilization research team are pursued.
