During the 2018 North Dakota Wheat Commission County Representatives meeting on December 5 in Fargo, ND, wheat quality researchers from the North Dakota State University Department of Plant Sciences demonstrated research techniques and projects they conduct to ensure that North Dakota wheat products are of the highest quality.

Hard red spring wheat research demonstrations organized by Dr. Senay Simsek showcased several dough testing and baking quality testing techniques and protocols used for determining metabolic and chemical changes in wheat exposed to herbicide treatments and disease. Simsek is the Bert D’Appolonia Cereal Science and Technology Wheat Endowed Professor and leads the Wheat Quality and Carbohydrate research project.

Durum wheat quality and pasta processing demonstrations organized by Dr. Frank Manthey included tests for cooked pasta strength and pasta production factors such as mixing, extruding and drying. Manthey leads the Durum and Pasta Quality project and coordinates the Cereal Science Graduate Program.

The North Dakota Wheat Commission was founded in 1959 to support wheat growers and increase production and quality of wheat products in the state. County representatives are elected by fellow wheat producers and meet regularly to develop policy and programs for wheat producers. The County Representatives meeting is held annually.
