Wheat Quality Specialist Educates Philippine and Malaysian End-users about U.S. Wheat

North Dakota State University Department of Plant Sciences wheat quality specialist Senay Simsek traveled to the Philippines and Indonesia May 6-19, 2019 to explain how the unique cereal chemistry of U.S. wheat contributes to quality factors of various food products.

North Dakota State University Department of Plant Sciences wheat quality specialist Senay Simsek traveled to the Philippines and Indonesia May 6-19, 2019 to explain how the unique cereal chemistry of U.S. wheat contributes to quality factors of various food products. She traveled with staff members of U.S. Wheat Associates.

Simsek, whose research program focuses on the effects of the chemical composition of wheat on end-product quality, met with millers and end-users of all classes of U.S. wheat and presented several series of seminars titled Basics of Cereal Chemistry; Biochemistry of Solvent Retention Capacity Test; Science behind Baking; and Current and New Dough Rheology Tests.

Simsek is the Bert L. D’Appolonia Cereal Science and Technology of Wheat Endowed Professor in the Department of Plant Sciences and has been a member of the department since 2007.
