Wheat quality project leader Dr. Senay Simsek has earned a promotion to professor, effective July 1, 2018.

Simsek earned her Ph.D. in Food Science at Purdue University and was hired as an assistant professor at North Dakota State University in 2007. In 2013, she was promoted to associate professor and awarded the Bert D’ Appolonia Cereal Science and Technology Wheat Endowed Professorship.

Simsek directs research activities in the area of wheat quality and carbohydrate chemistry. Her research focuses on the effects of the chemical composition of cereals - mainly spring wheat - on end-product quality. She also teaches graduate level courses in flour testing and baking, cereal and food chemistry, and carbohydrate chemistry.
