Tsogtbayar (George) Baasandorj successfully defended his Cereal Science Ph.D. dissertation on June 21, 2016. His paper is titled Hard Red Spring Wheat Quality Evaluation with Various Roller Mill Types and Breadmaking Methods.

Baasandorj’s research investigated whether different experimental and pilot-scale roller mills and breadmaking methods affect the end-use quality evaluation of hard red spring (HRS) wheat cultivars. An overall quality scoring system, which considered kernel quality, flour and dough quality, and baking quality, was developed, and this overall scoring system was used to determine if the ranking of the HRS wheat cultivars (in terms of quality) would change if different roller mills or bread baking methods were used. The proposed overall wheat scoring system will help farmers select wheat cultivars based on wheat end-use quality.

While at NDSU, Baasandorj was awarded the Charles and Linda Moses Presidential Graduate Fellowship, and was a member of the NDSU Food Science and Safety Club and the NDSU Mortar Board Honor Society.

A summer internship opportunity in the research and development department at The Mennel Milling Company in Fostoria, OH was a wonderful experience, he recalls, and it allowed him to gain industrial research experience, as well as apply academic research knowledge. Moving forward, he will pursue a career in the food industry, and is hoping for a position in research and development.

His Ph.D. adviser is Dr. Senay Simsek. The members of his graduate committee are Dr. Frank Manthey, Dr. Jae-Bom Ohm and Dr. Frayne Olson.
