Serap Vatansever Defends Ph.D. Dissertation

Serap Vatansever successfully defended her Cereal Science Ph.D. dissertation, Improvement of Organoleptic Attributes of Yellow Pea Flour through An Emerging Green Technology: Supercritical Carbon Dioxide + Ethanol Extraction, on April 7, 2020 at North Dakota State University. Her adviser is Dr. Clifford Hall, former professor of cereal science.

The goal of Vatansever’s research was to understand how optimized Supercritical Carbon Dioxide + Ethanol (SC-CO2+EtOH) extraction as a deflavoring technology and particle size affects different aspects of pea flours, such as sensory attributes and quality of pea flour, and isolated pea protein and starch chemistry and functionality. The outcomes of her research could help the pulse industry to use the optimized SC-CO2+EtOH extraction as an eco-innovative deflavoring technology. In addition, Vatansever’s research could be useful for the food industry to improve pulse ingredients’ techno-functionalities using this optimized extraction system. 

Vatansever has published three of her nine peer-review articles (three first-authored and six co-authored) in food science journals during her doctoral degree program. In addition, she has three research manuscripts and one invited paper under review for peer-review journals.She is currently preparing two more research manuscripts and one book chapter to submit during summer. In addition, she has presented her research outcomes at national and international meetings.

Vatansever is originally from Turkey and earned her Bachelor and Master of Science degrees in the Department of Food Engineering at Pamukkale University in Denizli, Turkey. She was also an exchange student in the Department of Food Science and Technology at the University of Helsinki in Finland. In addition, she completed a graduate level certificate in Statistics at NDSU, a leadership program, and two internship programs during her graduate studies at NDSU.

Vatansever actively participated in many professional societies. She was a member of the Institute of Food Technologists, Cereals and Grains Association, and Society of Sensory Professionals. She also served in many leadership roles and volunteer activities.
