Maite Cristina Alava Vargas successfully defended her cereal science M.S. degree on December 2, 2020. The title of her thesis is Stone Milling of Hard Red Spring Wheat: Effect of Settings on Flour, Dough and Bread Quality. Her advisor is Dr. Senay Simsek.

For her research, Vargas utilized a stone mill for size reduction of hard red spring wheat, examining different configurations to learn the effects on particle size, and how the difference in particle size distribution affects breadmaking quality.

Vargas is from Guayaquil, Ecuador and graduated from EARTH University in Guacimo, Costa Rica with an Agricultural Engineering degree.

Her graduate committee included Simsek, Dr. Frank Manthey and Dr. Xinhua Jia.
