Three members of the North Dakota State University Cereal Sciences Wheat Quality and Carbohydrate Research team participated in two back-to-back conferences March 11-17, 2018 in Mexico City. Senay Simsek, Kristin Whitney and Ana Magallanes-López presented research at the 4th International Association for Cereal Science and Technology Latin American Cereal Conference (ICC-LACC) and the International Gluten Workshop (IGW). Simsek also served on the IGW Scientific Committee.

Simsek organized a Food Safety session for the ICC-LACC, which focused on mycotoxin management in food and feed, aflatoxin management, the analysis of mycotoxins in wheat, and the fate of mycotoxins during food processing. Simsek presented “Mycotoxins and Health” during the session. Whitney and Magallenes-López also presented talks during the session. Whitney presented “Fate of Deoxynivalenol and Deoxynivalenol-3-Β-Dglucopyranoside during Wheat Processing”, and Magallanes-López presented “Fate of Deoxynivalenol during Wet Milling Process”.

A day trip from Mexico City to Texoco to tour the International Maize and Wheat Improvement Center (CIMMYT) research facilities concluded the ICC-LACC. CIMMYT provides collaborative research opportunities, partnerships, and training in agricultural research related to wheat and maize.

Whitney and Magallanes-López also presented posters at IGW, titled “Protein Quality and Molecular Weight Distribution of Hard Red Spring Wheat Millstreams in Relation To Bread-Making Quality” and “Wet Milling Impact on Starch and Gluten Fractions”, respectively.

The ICC-LACC ran March 11-14 and the IGW ran March 14-17.
