Cassandra Hillen defended her Cereal Science M.S. thesis, Sensory and Quality Attributes of Deodorized Pea Flour Used in Gluten-Free Food Products, on Monday, October 31, 2016 at North Dakota State University in Fargo, ND.

In her research, Hillen worked to deodorize flour made from peas and then evaluate the flours for sensory and other quality parameters. Different deodorization methods were evaluated, and, based on preliminary data, one method was selected to be studied in further detail. Through sensory evaluation of gluten-free cookies and cake, the team significantly improved the sensory attributes of these products using the deodorized pea flour. Other quality attributes were maintained or improved through the deodorization process. This created a gluten-free ingredient that is higher quality and would impact the sensory attributes less.

Hillen, a native of Fargo, had early ties to NDSU; her mom is an alumnus. Other reasons she gave for choosing NDSU include its medium size, number of highly regarded programs, and affordable tuition rate in comparison with similar universities.

While at NDSU, Hillen interned with Hormel Foods, received several scholarships and honors, and held memberships with campus clubs including: Sigma Alpha Professional Agriculture Sorority, Food Science and Food Safety Club, Student Government, and Campus Recreation Bowling League.

Hillen is currently employed at Anheuser-Busch InBev in Moorhead, Minnesota. After beginning as a technician in June 2016, she already has been promoted to Malt and Barley Chemist and is excited about other opportunities with the company.

Hillen’s graduate committee consisted of Dr. Senay Simsek, Dr. Bingcan Chen, and Dr. Julie Garden-Robinson. Her adviser was Dr. Clifford Hall.
