Frosted Rhubarb

Last week brought some chilly nights with low temperatures. Gardeners who planted early took precaution by covering their plants with a blanket.

This is the time of the year to enjoy all our favorite rhubarb recipes. Many of us are on social media and see posts about rhubarb becoming toxic after a frost.  Several calls have come into the office in regards to this subject since the low nighttime temperatures.

It is easy to tell if indeed your rhubarb should be tossed or is okay to consume.  Are the stalks soft and mushy? If the answer is yes, then you should pull your rhubarb and let it regrow.  The new growth will be safe for consumption.

As long as the stalks are firm and upright and the leaves have very little damage, the rhubarb can be used.  The old saying holds true, “If in doubt, toss it out.”
