Mediterranean Bean Salad

Ingredients:

  • 1 (15-oz.) can Great Northern Beans or garbanzo beans, drained and rinsed
  • 1/2 c. sun-dried tomatoes, cut into strips
  • 1/3 c. black olives
  • 1/3 c. fat free or reduced fat feta cheese, crumbled 
  • 2 cloves garlic, finely minced
  • 1/3 c. sliced black olives
  • 2 Tbsp. fresh cilantro, chopped
  • 2 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • Fresh ground pepper

Directions:

Drain and rinse beans. Combine all ingredients in a large bowl and mix thoroughly.

 

Makes six servings. Each serving has 150 calories, 7 g fat, 5 g protein, 16 g carbohydrate, 5 g fiber and 200 mg sodium.
