Mango Bean Burrito

Ingredients

  • 2 green or red bell peppers, seeded and chopped
  • 1 onion, peeled and diced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 mangos, peeled and chopped 
  • 1 lime, juiced
  • 1/2 c. fresh cilantro, chopped
  • 1 avocado, peeled and diced
  • 4 (10-inch) flour tortillas

Directions:

  1. In a nonstick pan, sauté bell peppers and onion for five minutes over medium heat. Add beans and stir well. Reduce heat to low and simmer about five minutes.
  2.  In a small bowl, combine mango, lime juice, cilantro and avocado. Reserve half of mixture for topping.
  3. Fill warmed tortillas with one-fourth of the bean mixture and one-fourth of the mango mixture.
  4. Fold ends of the tortillas in, then roll to make wraps. Top bean wraps with remaining mango mixture.

Note: If desired, you can add ½ to 1 tsp. of ground cumin when you add the beans. You also can punch up the flavor by adding a few drops of tabasco to the peppers and onions.

Note: If tortillas are difficult to wrap, try softening them in the microwave as follows: Open the tortilla package, leaving tortillas in the original package. Microwave 10 to 15 seconds; let rest. Repeat if needed. Do not refrigerate tortillas unless package indicates otherwise; they are shelf stable.

Makes four servings. Each serving has 490 calories, 13 g fat, 14 g protein, 81 g carbohydrate, 13 g fiber and 255 mg sodium.
