Black Bean Sandwich Spread
Ingredients:
- 1/2 c. canned black beans, drained and rinsed
- 2 oz. light cream cheese, softened
- 2 1/2 tsp. lemon juice
- 1/8 tsp. cayenne pepper
- 1/4 c. finely chopped red bell pepper (can substitute green pepper)
Directions:
Blend all ingredients except for chopped pepper in a food processoror blender until smooth. Transfer to a serving bowl and stir in chopped red pepper. Refrigerate for one hour to blend flavors.
Makes 3 servings. Per serving: 90 calories, 7 grams (g) fat, 3 g protein, 8 g carbohydrate, 2 g fiber and 150 milligrams sodium.
