Black Bean Dip

Ingredients:

  • 2 c. canned black beans, drained and rinsed
  • 4 tsp. tomato paste
  • 3 Tbsp. water
  • 2 medium garlic cloves, minced
  • 1 Tbsp. lemon juice
  • ½ tsp. ground cumin
  • ½ tsp. salt
  • 1/8 tsp. cayenne pepper
  • 2 scallions, green parts, chopped
  • 2 Tbsp. canned green chilies, chopped

Directions:

Combine all ingredients except scallions and green chilies in a food processor or blender. Puree ingredients until a consistent dip-like texture appears. Pour dip into a bowl. Stir in scallions and green chilies. Top with extra scallions. Serve chilled with crackers or vegetables.

Makes eight servings. Each serving has 40 calories, 0 g fat, 3 g protein, 10 g carbohydrate, 3 g fiber and 310 mg sodium.
