Red Cabbage with Apples

This healthy recipe comes from NDSU Extension Service.


•    2 medium tart apples, sliced
•    3 Tbsp. margarine
•    1 medium head red cabbage, coarsely shredded
•    1/4 c. water
•    1/4 c. vinegar
•    2 Tbsp. sugar



In a large pan, cook and stir apples in margarine over medium heat for 5 minutes. Stir in remaining ingredients. Bring to a boil, then reduce heat to low. Cover and simmer until cabbage is tender, about 40 minutes. Serve red cabbage with apples as a side dish for supper.


Makes 6 servings.

Per Serving: about 130 calories, 6 grams (g) of fat, 20 g of carbohydrate, and 5 g of fiber
