Quick Cheesy Broccoli-Cauliflower Soup

This healthy recipe comes from NDSU Extension Service.


  • 3 c. low-sodium chicken broth
  • 16-oz. package frozen broccoli and cauliflower
  • 15-oz. can of diced tomatoes (with onions and peppers, if desired)
  • 8 ounces of low-fat, processed cheese, cubed


Heat chicken broth. Add broccoli and cauliflower and simmer for about five to eight minutes until tender. Add tomatoes and heat for two minutes. Remove from heat, add cheese and stir until melted. Serve immediately.

Makes 6 servings.

Per Serving: about 140 calories, 4 grams (g) of fat, 14 g carbohydrate, and 3 g fiber
