Outtasight Salad

Here's a recipe that provides 1/2 cup of vegetables, 1/4 cup of fruit and 1/2 ounce of protein.

Salad Ingredients

  • 2 c. salad greens of your choice
  • 1 c. chopped vegetables (tomatoes, cucumbers, carrots, green beans)
  • 1 c. juice-packed pineapple chunks, drained, or fresh orange segments
  • 1/4 c. dressing (see recipe below)
  • 2 Tbsp. raisins or dried cranberries
  • 2 Tbsp. chopped nuts, any kind

Dressing Ingredients

  • 1/4 c. yogurt, nonfat, plain or fruit-flavored
  • 1 Tbsp. orange juice
  • 1 1/2 tsp. white vinegar


  1. Rinse salad greens, then place in a bowl or on a platter.
  2. In a large bowl, mix chopped vegetables and pineapple or orange segments.
  3. Add dressing and toss.
  4. Spoon mixture over salad greens.
  5. Top with raisins and nuts.


Makes four servings.

Per serving: 100 calories, 2 grams (g) fat, 2 g protein, 16 g carbohydrate, 2 g fiber and 250 milligrams of sodium
