Mediterranean Pasta Salad

This healthy recipe comes from NDSU Extension Service.

Ingredients

•    3/4 lb. cooked, seasoned pork roast, cut into thin strips
•    12 oz. penne or ziti pasta, cooked and drained
•    1 small cucumber, diced
•    6 oz. crumbled feta cheese
•    1 c. cherry tomatoes, halved
•    1/2 c. chopped fresh mint leaves
•    1/2 c. Greek vinaigrette dressing

Directions

•    In large bowl, gently toss all ingredients with dressing.

Makes 4 servings.

Per Serving: about 420 calories, 18 grams (g) of fat, 27 g of carbohydrate (To reduce fat, use a lower-fat dressing.).
