Mandarin Orange and Spinach Salad
This healthy recipe comes from NDSU Extension Service.

Ingredients

  • 1 bag fresh baby spinach
  • 1 (11-ounce) can mandarin oranges, drained
  • 1/4 medium red onion, sliced thin and separated into rings
  • 1/4 c. slivered almonds
  • 1/4-1/3 c. French dressing

Directions

Wash spinach thoroughly and place on paper towels in a zip-top bag. Refrigerate to crisp. Combine spinach, oranges, sliced onion and almonds in a large salad bowl, tossing well. Drizzle dressing over spinach mixture; toss gently.

Makes 6 servings.

Per Serving: about 90 calories, 3.5 grams (g) of fat, 14 g carbohydrate, 2 g protein and 160 mg sodium
