Kiddie Salad
This healthy recipe comes from NDSU Extension Service.


  • 2 c. tomatoes, chopped
  • 1 Tbsp. cilantro, chopped
  • 1 Tbsp. onion
  • 1/4 c. black beans, drained, rinsed
  • salt to taste


Place all ingredients in a bowl and stir to combine. Serve with tortilla chips.

Makes 4 servings.

Per Serving: about 25 calories, 0 grams (g) of fat, 6 g carbohydrate, 2 g fiber, 1 g protein and 40 mg sodium
