Inside Out Pepper Casserole
This healthy recipe comes from NDSU Extension Service.


  • 1 pound ground beef, 90 percent lean
  • 1/2 c. chopped onion
  • 1 (16-ounce) can drained and cut up tomatoes
  • 1 large green pepper, chopped (or several green peppers, suit your own taste)
  • 1/2 c. uncooked long-grain rice
  • 1/2 c. water
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup (4 ounces) shredded cheese (or more to suit your taste)


  • In a skillet, brown beef. Drain
  • Transfer to a greased 2-quart casserole dish.
  • Add the next eight ingredients.
  • Cover the bake at 350 F for one hour or until rice is tender.
  • Uncover and sprinkle with the cheese.
  • Return to the oven until cheese melts, about 5 minutes.

Makes 6 servings.

Per Serving: about 200 calories, 6 grams (g) of fat, 15 g carbohydrate, 22 g protein, 2 g fiber, and 290 mg sodium
