Garden Fresh Bruschetta
Ingredients
2 tomatoes, seeded and diced
2 Tbsp red onion, diced
2 Tbsp. basil, chiffonade
Zest of ½ lemon
1 Tbsp. lemon juice
1 Tbsp. olive oil
1 Tbsp. Balsamic vinegar
Salt and pepper to taste
Directions
Add all ingredients to a bowl and stir to combine. Refrigerate for at least 1 hour to allow flavors to meld.
Makes four servings. Each serving has 50 calories, 3.5 g fat, 1 g protein, 5 g carbohydrate, 1 g fiber and 5 mg sodium.
