Easy Pumpkin Cake

This healthy recipe comes from NDSU Extension Service.


  • 1 can pumpkin
  • 1 c. water
  • 1/2 tsp. vanilla
  • 1 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1 box angle food cake mix (one-step)
  • Whipped cream/topping (optional)


Preheat the oven to 350 degrees. Mix pumpkin, water, vanilla, and spiced (you can substitute 1 1/2 teaspoons of pumpkin spice for the listed spices). Gently stir in angel food cake mix. Pour into a 9- by 13-inch pan sprayed with nonstick cooking spray. Bake for 30 minutes.

Makes 12 servings.
