Creamy Coleslaw for 50

This healthy recipe comes from NDSU Extension Service.


  • 7 pounds shredded cabbage*
  • 2 c. mayonnaise or salad dressing
  • 2 c. half and half (light cream)
  • 1/2 c. cider vinegar
  • 1/2 c. plus 1 Tbsp. sugar
  • 1 1/2 Tbsp. salt
  • 1/2 tsp. white pepper


Rinse and shred or chop cabbage. Combine remaining ingredients. Mix together and refrigerate. For most accurate serving, use a No. 12 (1/3-cup) scoop.

Makes 50 (1/3 c.) servings.

Per Serving: about 100 calories, 8 grams (g) of fat, 7 g carbohydrate, 1 g protein and 258 mg sodium
