Chickpea Sandwiches
This healthy recipe comes from NDSU Extension.


1 (15-oz.) can garbanzo beans, drained and rinsed

1 stalk celery, chopped

¼ medium onion, chopped

1 Tbsp. mayonnaise

1 Tbsp. lemon juice

1 tsp. dried dill weed

Ground black pepper (to taste)

Salt (if desired, to taste)


Drain and rinse chickpeas. Pour chickpeas into a medium-size mixing bowl and mash with a fork. Mix in celery, onion, mayonnaise (to taste), lemon juice, dill weedandpepper. Serve on whole-grain bread or buns

Makes three servings. Each serving (with two slices whole-wheat bread) has 280 calories, 5 g fat, 13 g protein, 46 g carbohydrate, 9 g fiber and 480 mg sodium.
