This healthy recipe comes from NDSU Extension.


  • 2 Tbsp. cream cheese, reduced-fat
  • 2 Tbsp. light Ranch dressing
  • 1 7- to 8-inch tortillas
  • 1/2 c. shredded carrots
  • 1/2 c. finely diced broccoli
  • 4 Tbsp. black beans*


Mix cream cheese and Ranch dressing until well blended; spread onto tortillas. Top with vegetables and black beans. Roll up tortillas tightly and cut each roll into six pieces.

*Tip: Freeze leftover black beans or add to salsa or soup.

Makes 4 servings.

Per Serving: about 120 calories, 3 grams (g) of fat, 20 g carbohydrate, 4 g protein, 4 g fiber, and 310 mg sodium
