Broccoli Pinwheels

Ingredients
- 2 Tbsp. cream cheese, reduced-fat
- 2 Tbsp. light Ranch dressing
- 1 7- to 8-inch tortillas
- 1/2 c. shredded carrots
- 1/2 c. finely diced broccoli
- 4 Tbsp. black beans*
Directions
Mix cream cheese and Ranch dressing until well blended; spread onto tortillas. Top with vegetables and black beans. Roll up tortillas tightly and cut each roll into six pieces.
*Tip: Freeze leftover black beans or add to salsa or soup.
Makes 4 servings.
