Baked Sweet Potato Fries

This healthy recipe comes from NDSU Extension Service.


  • 1 large sweet potato
  • 1 Tbsp. olive oil
  • 1 tsp. salt


Preheat oven to 400 degrees. Cut off ends of potato, peal and slice lengthwise into strips. In medium bowl, toss potatoes with oil until evenly coated. Arrange in a single layer on a baking sheet. Sprinkle with salt if desired. Bake about 30 minutes, or until edges are crisp and potatoes are cooked through. Serve immediately.

Makes two servings.

Per serving: 140 calories, 7 grams (g) fat, 19 g carbohydrate and 1200 mg sodium.
