Baked Garlic Sweet Potato Fries
This healthy recipe comes from NDSU Extension Service.

Ingredients

4 medium sweet potatoes, peeled and cut into ½-inch strips

2 Tbsp. olive oil

Kosher salt and ground black pepper, to taste

5 cloves garlic

½ c. shredded Parmesan

2 Tbsp. chopped parsley leaves (optional for garnish)

 

Directions

  1. Preheat oven to 400 F. Lightly coat a baking sheet with nonstick cooking spray.
  2. Place potatoes in a single layer onto the prepared baking sheet. Add olive oil and gently toss to combine; season with salt and pepper, to taste. Bake for 35 to 40 minutes, or until golden and crisp. Flip fries halfway through cooking.
  3. Combine sweet potato with garlic and Parmesan.
  4. Serve immediately.

Makes four servings. Each serving has 240 calories, 12 grams (g) fat, 7 g protein, 28 g carbohydrate, 4 g fiber and 240 milligrams sodium.
