Glorified Rice

This healthy recipe comes from NDSU Extension Service.


  • 3 c. cooked rice
  • 2 c. crushed pineapple, drain and save juice
  • Marshmallows or bananas (optional)
  • 1½ c. whipped topping

Whipped Topping

  •  ½ c. very cold water or pineapple juice
  • 1 Tbsp. lemon juice
  • ½ c. dry milk powder
  • 5 Tbsp. sugar
  • ½ tsp. vanilla


Cook rice (refer to “How to Cook Rice”) and mix with pineapple and marshmallows. Cool rice before adding whipped topping. Whip water/pineapple juice, lemon juice and dry milk powder with beater until stiff. Add sugar and vanilla; continue whipping. Add whipped topping to rice and fruit, mix gently and refrigerate. Serve chilled.

Makes 10 servings.

Per serving: 112 calories, < 1 grams (g) fat, 25 g carbohydrate and 20 mg sodium.
