Busy Day Oatmeal Cake

Ingredients
- 1 c. oatmeal oats, quick (uncooked)
- 1¼ c. boiling water
- 1 c. sugar
- ½ c. shortening
- 2 eggs
- 1½ c. all-purpose flour
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. allspice
- 1 tsp. soda
Icing
- 1 c. brown sugar
- ½ stick butter
- 4 to 5 Tbsp. evaporated milk
- 1 c. coconut
- ½ c. nuts (optional)
Directions
Preheat oven to 350 F. Pour water over oats and let stand. Cream sugar and shortening. Add eggs; beat.Add flour, oatmeal, vanilla and spices. Pour into floured 9-by-13-inch pan. Bake for 30 to 35 minutes or until done. Cool cake before icing. For a lower calorie, lower fat version, omit icing and dust with powdered sugar. Icing: Boil one minute and add coconut and nuts. Spread on top of cooled cake. Broil a few minutes until lightly browned.
Makes 12 servings.
Per serving: 210 calories, 10 grams (g) fat, 30 g carbohydrate and 120 mg sodium.
(With icing: Per serving: 380 calories, 20 grams (g) fat, 50 g carbohydrate and 170 mg sodium).
