Taco Meatballs

This healthy recipe comes from NDSU Extension Service.

Ingredients

  • 1 lb. ground beef or ground turkey
  • 1 packet taco seasoning
  • ½ c. water
  • 1 c. shredded cheddar cheese
  • 2 c. biscuit baking mix (such as Bisquick)
  • 1 c. taco sauce

Directions

Preheat oven to 350 F. Combine all ingredients except cheese and taco sauce. Shape into 20 balls. Pour sauce over meatballs and sprinkle with cheese. Bake on greased 9- by 13-inch baking dish until meatballs reach an internal temperature of 160 F, about 25 to 30 minutes.

Makes 10 servings.

Per serving: 216 calories, 6 grams (g) fat, 23 g carbohydrate and 604 mg sodium.
