  • 6 whole-wheat English muffins
  • 3/4 c. barbecue sauce
  • 1 1/2 c. chicken, cooked and diced
  • 3/4 c. reduced-fat shredded cheddar cheese
  • 1 bell pepper, chopped


Preheat oven to 450 F. Slice English muffins in half and place on ungreased, large cookie sheet. Spread barbecue sauce on English muffins to within 1/4 inch of edged. Top with chicken, cheese and bell pepper. Bake seven to 12 minutes or until cheese is melted.

Makes 12 servings.

Per Serving: about 140 calories, 2 grams (g) fat, 11 g protein, 20 g carbohydrate, 2 g fiber, and 330 milligrams (mg) sodium.
