Huevos Racheros with Salsa

This healthy recipe comes from NDSU Extension Service.


  • 4 6-inch tortillas
  • Nonstick cooking spray
  • 4 large eggs
  • 1/8 tsp. ground black pepper
  • 4 Tbsp. cheese, shredded cheddar or Monterey Jack
  • 2 c. salsa


Put tortillas in microwave for 10-15 seconds or until warm. Sprat a large skillet with nonstick cooking spray over medium heat. Cooks eggs (scrambled works well). Divide eggs onto tortilla shells and top with 1 tablespoon cheese. Spoon 1/2 cup salsa onto tortilla. Roll and enjoy!

Makes 4 servings.
