This healthy recipe comes from NDSU Extension Service.

Ingredients

  • 1 pound ground turkey
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 c. canned pumpkin*
  • 1 c. tomato sauce
  • 3 Tbsp. brown sugar
  • 2 Tbsp. spicy brown mustard
  • 1 tsp. chili powder

*Amount of pumpkin can be adjusted depending on texture consistency.

Directions

1. In a large saute pan, brown the ground turkey over medium-high heat. Cook until meat reaches 165 F.

2. Reduce the heat to medium-low and add the finely chopped onions. Cook until the onions are almost soft.

3. Add minced garlic and cook for an additional couple of minutes.

4. Reduce the heat to low. Add the remaining ingredients and mix well.

5. Serve hot.

Makes 10 servings.

Per Serving: about 120 calories, 4 grams (g) of fat, 10 g carbohydrate, 11 g protein, 1 g fiber, and 95 mg sodium
