Easy Supper Casserole

This healthy recipe comes from NDSU Extension Service.


  • 2 lb. lean ground beef
  • 1 onion, chopped
  • 1 c. uncooked macaroni
  • 2 c. tomato juice
  • 1 15.5-oz. can chili beans
  • 1 tsp. crushed oregano
  • 2 tsp. chili powder
  • 1 tsp. salt (or to taste)
  • 1/4 tsp. pepper
  • 1 c. grated cheddar cheese


Brown ground beef in large frying pan or electric skillet; drain fat. Add chopped onion to ground beef; cook until onion is clear. Turn heat down; add macaroni, juice, beans and spices. Stir well. Cover pan and simmer mixture for 20 minutes. (If you uncover the pan more than twice to check and stir, add additional tomato juice.) Remove pan from heat, stir and sprinkle grated cheese on top of mixture. Cover and let stand until cheese melts.


Makes six servings.

Per serving: 269 calories, 8 grams (g) fat, 31 g carbohydrate and 4.5 g fiber.
