2 chicken breasts, cooked and shredded

1 orange bell pepper, diced

½ medium onion, diced

2 tomatoes, diced

2 c. shredded cheddar cheese

½ c. black beans

8 whole wheat tortillas


Cook chicken and shred.  Dice peppers, onions and tomatoes.  Lightly oil frying pan and heat to medium-high heat.  Place the tortilla in pan.  Add a sprinkle of shredded cheese to one half of the tortilla. Add diced vegetables, beans and chicken on top of cheese.  Add another sprinkle of cheese to help stick the quesadilla together. Fold wrap in half and allow to cook for 5 minutes or until lightly browned an slightly crispy.  Flip tortilla and repeat on other side.

Makes 8 servings.

Each serving has 240 calories, 6 grams (g) fat, 18 g protein, 27 g carbohydrate, 3 g fiber and 420 milligrams (mg) sodium.
