Chicken Cacciatore

This healthy recipe comes from NDSU Extension Service.


  • 1 chopped onion
  • 1 c. canned tomatoes
  • 1/2 c. tomato sauce
  • 1/8 tsp. garlic powder
  • 1 tsp. oregano
  • 1/8 tsp. pepper
  • 4 pieces chicken, skin removed (thighs, breasts, or legs)


Peel and chop the onion. Put the chopped onion in a saucepan. Add the tomatoes, tomato sauce, garlic powder, oregano and pepper. Simmer on low heat for three minutes. Add the chicken to the sauce pan. Cover the pan. Cook over low heat for about one hour until the chicken is tender and has reached an internal temperature of 165 F.

Makes 4 servings.

Per Serving: about 210 calories, 8 grams (g) of fat, 11 g carbohydrate, and 3 g fiber.
