Wild Rice Dressing

This healthy recipe comes from NDSU Extension Service.

Ingredients

•    4 slices turkey bacon, cut into 1-inch pieces
•     1 c. chopped onion
•    1 c. chopped celery
•    1/2 lb. mushrooms, cleaned and sliced
•    1 4-oz. pkg. wild rice, cooked according to package directions
•    2 c. fresh breadcrumbs
•    1/2 lb. turkey breakfast sausage, cooked and drained
•    1 tsp. dried oregano
•    1/2 tsp. dried sage
•    Salt and pepper to taste

Directions

 

•    In medium-size skillet over medium heat, sauté bacon until almost crisp. Add onion, celery and mushrooms. Continue cooking until vegetables are tender. In a large bowl, combine the bacon mixture, cooked wild rice, breadcrumbs, cooked sausage, oregano and sage. Season if desired with salt and pepper. Spoon dressing into lightly greased 2-quart casserole dish. Bake covered, in a preheated 325-degree oven, for 35 to 40 minutes.

Makes 8 servings.

Per Serving: about 224 calories, 9 grams (g) of fat, and 26 g carbohydrate.
