Three-grain Peanut Bread

Ingredients
- 1 c. flour
- 1/2 c. quick cooking oatmeal
- 1/2 c. cornmeal
- 1/2 c. dry nonfat milk powder
- 1/2 c. sugar
- 1. Tbsp. baking powder
- 3/4 tsp. salt
- 2/3 c. peanut butter
- 1 egg white
- 1 1/2 c. nonfat milk
Directions
Preheat oven to 325 F. Combine dry ingredients in a large bowl. Using two knives or a fork, cut peanut butter into dry ingredients until it appears coarse and crumbly. In a small bowl, beat together egg white and milk. Add to dry ingredients and mix well. Spread mixture into a greased loaf pan. Bake at 325 F for 45 minutes. Cool for 10 minutes and remove from pan.
Makes 20 servings.
Per Serving: about 130 calories, 5 grams (g) of fat, and 17 g carbohydrate.
