Strawberry Muffins
Strawberry Muffins
This healthy recipe comes from NDSU Extension Service.


  • 2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 c. butter
  • 1/4 c. vegetable oil
  • 3/4 c. sugar
  • 1 egg
  • 1 c. plain yogurt
  • 1/2 tsp. almond extract
  • 1 c. chopped strawberries
  • 2 Tbsp. brown sugar.


Preheat the oven to 450 F. In a bowl, using an electric mixer, cream together butter, sugar and oil until smooth. In a separate bowl, combine the first four dry ingredients. Add the egg, yogurt, and almond extract to the sugar mixture and mix well. Slowly add the dry mixture to the wet mixture. Add the chopped strawberries and lightly mix. Place paper muffin liners in your muffin tins or grease the tins well. Scoop the batter into the muffin tins and top each muffin with a sprinkle of brown sugar. Bake for 12 to 14 minutes or until the tops are golden brown.

Makes 14 servings.
