Southwest Quinoa Salad
This healthy recipe comes from NDSU Extension.


3 cups cooked quinoa

1 cup cucumber, diced

1 red bell pepper, diced

1 (14.5 oz.) can corn, drained

1 (14.5 oz.) can black beans, drained and rinsed

1/4 cup cilantro, chopped

1/4 cup olive oil

3 Tbsp. lime juice

2 tsp. cumin

1/2 tsp. cayenne pepper

1/4 tsp. garlic powder

Salt and pepper to taste


Combine all ingredients in a bowl and mix well.


Makes 16 (1/2 cup) servings. Each serving has 120 calories, 5 g fat, 4 g protein, 16 g carbohydrates, 3 g fiber and 60 mg sodium.
