Italian Pasta Salad

This healthy recipe comes from NDSU Extension Service.


  • 4 c. pasta, cooked (any shape)
  • 2 c. broccoli pieces
  • 1 c. carrot slices
  • 1/2 c. red pepper strips
  • 1/4 c. sliced green onions
  • 1/2 to 3/4 c. Italian or zesty Italian salad dressing, light or reduced-fat


Cook pasta according to package directions. Wash and cut up vegetables. Mix all ingredients together and refrigerate for about 30 minutes before serving. For a more hearty salad, add strips of cooked ham or a can of cooked red beans, or sprinkle with grated cheese.

Makes 8 servings.

Per Serving: about 140 calories, 1 grams (g) of fat, 29 g carbohydrate.
