This healthy recipe comes from NDSU Extension.


Jar Mix Ingredients:

2 c. all-purpose white flour
1 c. whole-wheat flour
1 Tbsp. baking powder
3 tsp. caraway seeds
½ tsp. salt
½ tsp. ground nutmeg
½ tsp. dried thyme

Layer ingredients in a clean quart-sized jar. Cover the jar tightly with a lid, decorate and attach a copy of the recipe card.

To Make Bread:

• 1 jar Herb Quick Bread mix
• Additional ingredients:
– 1 egg
– 1 c. fat-free milk
– 1/3 c. canola oil


Preheat oven to 350 degrees. In a mixing bowl, whisk together the white and whole-wheat flour, baking powder, caraway seeds, salt, ground nutmeg and dried thyme. In a separate bowl, whisk the egg, milk and oil. Add the wet ingredients to dry ingredients and stir until moistened. Place mixture in a 9- by 5-inch loaf pan coated with nonstick cooking spray and bake for 40 to 50 minutes. Cool for 10 minutes in pan; remove from pan and place on a wire cooling rack.

Makes 16 servings. Each serving has 140 calories, 5 g fat, 4 g protein, 21 g carbohydrate, 1 g fiber and 180 mg sodium.
