This healthy recipe comes from NDSU Extension Service.


8 slices whole wheat bread

½ c. nut spread (peanut butter, Nutella)

1 c. strawberries, diced

1 whole egg

3 Tbsp. skim milk

2 Tbsp. white sugar

1 tsp. ground cinnamon


Cut the crust off the slices of bread.  Flatten using a rolling pin.  Spread 1 Tbsp. nut spread on each of the slices of bread.  Add 2 Tbsp. of dice strawberries down the middle of the slices of bread.  Roll each slice of bread up tightly.  In a shallow bowl, whisk the eggs and milk until well combined.  Heat a greased skillet over medium heat.  Dip each bread roll in the egg mixture coating well.  Place them in the skillet with the seam side down. Turn the rolls to cook and brown tem on all sides, about 2 minutes per side.  On a plate, mix the sugar and cinnamon.  Immediately move cooked rolls from the pan to the cinnamon sugar and roll until completely covered.

Makes 8 servings.

Each serving has 200 calories, 10 grams (g) fat, 8 g protein, 23 g carbohydrate, 4 g fiber and 250 milligrams (mg) sodium.
