Favorite Pumpkin Bread

This healthy recipe comes from NDSU Extension Service.


  • 3 1/2 c. flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 2 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 2 c. brown sugar
  • 1 c. canola oil
  • 4 eggs
  • 2 c. canned pumpkin


  1. Preheat oven to 325 degrees. Spray two loaf pans (9- by 5-inch) with canola baking spray.
  2. In a large mixing bowl, combine all ingredients until just blended.
  3. Pour batter into pans and bake for about one hour and 15 minutes. Cool on wire racks.


Makes 24 servings.

Per serving: 220 calories, 10 grams (g) fat, 31 g carbohydrate and 4 g protein.
