4 eggs, scrambled or cooked as desired

1 avocado, halved, pitted and sliced

1 tomato, sliced

4 slices whole-wheat bread


Cook eggs as desired.

While eggs are cooking, toast bread.

Add cooked eggs to toast.

Layer one-quarter of the avocado on each slice of toast.

Place tomato slice on top of avocado.

Refrigerate extra tomato and/or avocado and use in another recipe.

Makes four servings. Each serving has 210 calories, 11 g fat, 11 g protein, 18 g carbohydrate, 4 g fiber and 210 mg sodium.
